    For our road trip today, I decided to make these delicious sounding bars that my friend had tweeted about earlier this week. These Quinoa, Fruit & Nut Bars were delish. And … super easy to make. Plus they are filled with “good for you” ingredients.

    Had some Swiss chard in my garden that needed to be eaten … so I sautéed it up and to make it a meal, served it over creamy grits.
    This is one of my favorite ways to enjoy Swiss chard. The pinenuts and golden raisins make ordinary sautéed greens delish.

    Inspired by the veggie burger competition, I decided to try one of the recipes that my friend Ellen had given me. One of her daughters has been a vegetarian for a couple of years, so she has built up a repertoire of family friendly recipes. This veggie burger made with pinto beans and corn was a hit with my whole family. In fact, my girls asked for seconds!

    Many of you may know that I wrote a salad cookbook a few years back – Simply Salads. I am a big proponent of homemade dressings. They are better than their store bought counterparts for many reasons. (1) They taste better & fresher. (2) They are healthier because they contain no preservatives or chemicals. Plus you can control the sodium and sugar. (3) They are cheaper … especially since most dressings are made with everyday kitchen staples. Here is one of my family’s favorite vinaigrettes.

    Went out to dinner and ordered the portabella mushroom appetizer. The whole time I was wishing I had this version! These meaty portabella mushrooms make a satisfying meal when paired with a simple salad.
